I've had good luck with bubble wrap, the kind with small bubbles that stands 
1/4" high when sandwiched between two surfaces.  It's extremely conforming, 
like a 1000 point support.  It's a lot cleaner than carpet, and it can be 
thorougly rinsed off in a few seconds.  It's cheap enough to replace between 
grits and occassionally during polishing.  It doesn't friction-grab the back 
of the mirror quite as well as wet carpet, so depending on your polishing 
technique you may need a few cleats screwed into the table to keep the 
mirror from sliding.
