First, you have not mentioned the diameter of the mirror.
This is important to judge if reducing thickness is advisable.

The same concerns your second question:

Very very long.
But this is not recommended disregarding the mirror size. You should better
consider cutting off excess thickness, not grinding.

In any case there is risk that figure of your mirror will be disturbed
because of releasing some internal tensions by thinning. If this will
happened than you should refigure the mirror meaning recoat it as well.
