Actuially, grinding is one type of operation where you are
breaking off the chuncks of glass while polishing is more shaving
the tops of those peaks off.  The size of those peaks keep
getting smaller but they still are sharp peaks and balleys even
with the fine grits.
If you want to have some fun, take the 5 micron grit and put it
on a lap and you will find that it acts differently than if you
just ground it between two pieces of glass@
