Yep, there are color stripes on the front of the vidicon that are used to
detect what the color is.  Very special electronics are used to detect the
info which is rather frequency sensitive that pulls out the color info from
the signal from the vidicon.
If you want to do the work with a PMT, a rotating color wheel can do the job
as well as trying to put the stripes on the PMT.  I'd suspect that putting
stripes on the PMT really won't work anyway as the PMT isn't a scanning
device but rather just a single point detector.
