Acetic acid is a reassuring stink I can live with. 
Many of those hydrocarbon or alcohol-curing substances
have a faint, tolerable odor that may be more toxic
than vinegar, a food-grade substance found in salad
dressings.

Even if the alcohol-cured substances are non-toxic, I
prefer the acetic acid to alcohol because:
1.  I'm watching my weight
2.  I'd rather put salad into my body than alcoholic
beverages.  (This depends on the situation.  If my
belly is already filled, alcohol is desirable.)

So if I'm hungry or thirsty should determine which
version of silicone to use...
