Hi Jeff,
I did all this weight and balance stuff, weighed everything - well almost
everything - and when I built it, the C of G was higher than I thought by
several inches.

I think the rules are:
1. The C of G will be higher than your calculations.
2. Everything you do will raise the C of G.
3. Paint is heavier than you think.

It will be easier to raise the C of C with a small weight at the focuser
than lower it with a large weight at the mirror so I suggest that you assume
that the C of G will be higher than you think.
