Grooves in the surface are not required.  When you do put them in they act
merely as crude resovoirs of grit (also the place where grit hides and
doesn't get used!) for the cutting action according to some.  I wouldn't
consider putting grooves in for doing the fine grinding as so much of the
grit won't get used unless the grooves are very small and shallow.
