Read a "Bible" again. Texerau gives a good example of making a flat by testing it against a spherical mirror (Common test ?). I think that the same/similar method is described in Advanced Telescope Making Tecniques. If memory serves, there is a sizeable chapter by Strong in ATM II or III about making flats as well.
