You're confusing polishing action with a different radius of curvature.  The
mirror settles into a slightly shorter radius of curvature when the center
polishes out first.  The pitch lap and your strokes tend to stabilize at a
very slow drift towards ever shorter radius of curvatures.  You could
theoretically parabolize this way - I tried and it's very difficult to
control.
