Depends upon how flat you want it to be.
I'm assuming that you just want it flat enough to not rock on the
table.
That is easily done out on a diewalk or other such concrete and
you just push it along for a few feet and it will probbly be flat
enough to not rock on the table.
Even just grabbing a piece of sandpaper and taping it to the
tabletop and pushing the tool around on top of it will do a
decent job.
Most of the stuff that we use for tile tools is so soft that it
will just embed the SiC into it rather than grind the surfacce
away that much and it produces a lot of dust in the process which
keeps the grit from doing a good job of grinding the surface
flat.
Generally, if the tool is fairly well supported so that it
doesn't rock, it is usually good enough to grind with.  The
random stroking across it will even out the high spots that the
supports will give it with no problems.
I'd also suggest taht you invest in some of the rubber drawer
material and the wifey will appreciate the stuff for her drawers
after you have finished with the roll.  Be aware that one roll
may not do all of th drawers for herr so you may have to go out
and buy some more!
