Google is a good way to find things.  Entering the name Foucault into the
search engine will bring up both articles on Foucault (I've got his '57
paper on my website for one) as well as articles on building testers as well
as using them (I've got a great basic paper on how the test works).
In addition, entering "mirror making" will bring up all kinds of articles on
grinding and polishing mirrors so you will have a wealth of info on the
whole process.
There are several programs that are used for reducing the data from the
Foucault test, I use TEX myself, others have programs that work as well and
have been discussed often in this forum.  Figure45 and others will do you
well.  I'll note that most of the programs have been done for the DOS rather
than for windoz or the Mac.
