You are correct, you can't do this with an offset secondary. Indeed, after you've collimated a scope with an offset secondary, if you look in the focuser thru a sight tube you should see everything centered EXCEPT the shadow of the secondary.

I think the centering of the shadow comes from SCT instructions.
