What do you consider being able to pour it from the pot?  Even that
description doesn't define when it is hot enough!  Get the stuff hot enough
to pour like water and you're basically boiling it and the temper of the
pitch is then rapidly changing.
FWIW, I usually work with the hot pitch when it is at the taffy stage and
touching it doesn't burn the fingers unless the stuff takes and adheres to
the finger where it hurts but doesn't burn the skin.
