The bevel shouldn't be much more course that the surface being ground.  Course stone is fine when course grinding but you need to dress with a fine stone when lapping.  I use a diamond file, the dress with a medium to fine stone...

I don't like a course stone because I have had small pieces break off 
during fine grinding and had to back up.
