It would be better to focus the LED onto a small ball bearing (maybe 1/4"
diameter) with a lens to increase the light output.  Even just using a lens
to focus the light of the LED onto the pinhole will improve the output of
the pinhole which, in addition, should be a bit smaller than that.
In addition, I think that you will want to have the artificial star further
away from you when doing the test.
