The further you go past 45 degrees, the more of a pinching sideways 
force you apply to the mirror.  Thus you may eliminate potato-chipping 
in one direction and induce it in the other. 

I've thought about putting posts at +-30 from the vertical and attaching 
two pivot bars that have supports at 45 and 15 degrees from the 
vertical, one on either side.  That will give 4 points of support spread 
out with even loading.  I haven't tried this yet, and my thin 16" mirror 
is still in fine grinding, so it will be a while before I get the chance.
