Steve,  You should be able to find out whatever you need at this site:

There are thousands of materials listed; I'm sure plywood is there.  

As a side note, you might be better off using the more expensive baltic
birch type plywood.  It is stronger, more consistant, and more stable. 
You can use 1/2" rather than 3/4" for many parts (depending on size of
the telescope).  It will be lighter of course.
