I've not worried about whetehr the bevel is curved or absolutely
flat. I usually do curved bevvels to a degree as they cut faster
than absolutely flat ones - the pressure on a edge ends up
cutting faster than over a larger area that a flat bevel and you
end up doing the job much faster. In addition, you generally end
up cutting a groove in the grinding stone as you work and that
means a curved beevel. All in all, not something that you really
need to worry about so long as the edge is supported by glass
further out, if you get my meaning on this.
