The most important reason to have a pulley, even if you use a variable
speed motor, IMHO, is safety. I can adjust the tension on my pulley to
be enough to move the work, but to slip if the disks get stuck, or my
hand gets caught in something. I'd rather have the pulley slip than to
lose a finger or ruin the glass.
