I routinely cut full-hardened SS up to 0.012" thick using a paper cutter.
After many thousands of cuts, the paper cutter (very old Premier brand by
the Photo Materials Co. made in Chicago, Ill.) still cuts paper well! YMMV.
One more approach might be to chemically mill thin SS stock using the same
method as etching copper PCB using Ferric Chloride.
