You can special order Apple Plywood from Lowes, Home Depot or any
distributor that carries State Industries products

Lawrence is correct in a sense.
 
However, ApplePly ~= Baltic Birch <> Birch Plywood.

ApplePly commonly refers to any thin (<=1/16) laminated *HARDWOOD* plywood.
ApplePly at one time was all Maple veneers however, now it's almost
exclusively made from Alder and/or Maple and Birch (Betula pendula) which
makes it very similar to BB (made in USA) which is made from Alder and Birch
(Betula pendula). Also note that Baltic Birch made in the USA is cannot be
truly called Baltic Birch. 

If you want the real "Baltic Birch" (sometimes called "Finnish Birch" which
could be the marine grade version of BB) you'll have to open your pocket
book and buy the stuff from Sweden, Norway, or Finland which is made from
Aspen, Alder, and Arctic White Birch (Betula pubescens) from the Baltic
region; hence the name. The reason this is superior to US stuff is the
climate in which these trees grow; colder, making them grow slower and
stronger due to a tighter grain structure. 

If you're going to do wood veneering; ALWAYS use Baltic Birch. 

But for god sakes! Don't confuse this with Birch Plywood.

Oh almost forgot, if you see cheap "Baltic Birch" from China; avoid it like
the plague. You can't be sure what you're getting inside. I'm still a little
apprehensive about the Russian stuff.
