I think the advantages of working with a wooden jig in a vice, is :
1. That such a jig is very easy to make and
2. It is easy to make a ring of a certain diameter, because the diameter
ring is determined by the radius of the jig. I made three rings of around
326 mm diameter with my 145/160 (convex/concave) jig and the difference in
diameter is not more then about 1 millimeter. With a bit more experience
(these were my first three rings) this will be less.

Advantage of the rollertool is, that you can make rings of different
diameters using the same tool, while new wooden jig must be made for every
diameter. But because of point 1 above, that's no big deal.
