One thing about doing a really big flat tho is to do the polishing and then
cutout the flat part and you can often gain a bit better flat over that
area.  I will note that it is a waste of glass to do it that big.  Start
with a set of 6" flats and then you can do a set of 8" flats and compare
them against the 6" flats and step up to a really big set of flats of pyrex
in the end.  When you are done, you will be able to sell the other flats for
very good prices on eBay.
