I guess one reason would be image brightness. Using two scopes (one for
each eye) would maintain the brightness of the field of view, while
using a binocular eyepiece splits each beam of light in two. This will
decrease the fov brightness by almost a full magnitude.
By the way, using the 1 meter telescope in Puimichel, South of France, I
have seen the stereoscopic effect using two eyepieces. The brightest
stars of the Pleiades seemed to hover in front of the fainter ones.
Quite a view!
