Even without DRO's & CNC's, you can't beat a machine shop for ample supplies 
of steady surfaces.  At various times I have rested Foucault testers on the 
Gibraltar-like surfaces of precision marble slabs, and the beds of vertical 
mills and bandsaws.  Breath holding is not required.
