I only have actual experience with SkyMap Pro. It reads the system clock
periodically, as when I manually make a dramatic change (say, a few minutes
or so) to the system clock, the program reacts to that within a few
seconds. Someone here says that TheSky behaves this way too but this should
be considered unvetted information. 

This sort of thing should be a trivial test with most other systems, as you
suggest. In any case, both my charting software and my image acquisition
software react properly to system time changes, and do not keep a software
clock running, thus making the SNTP solution workable in my shop.
