web site.  He has  a good section about it.

I have found that web cams have a too wide angle lens.
 Once you replace the lens then they work ok.  It is
better if you can get one that you can control the
intensity and other parameters.  However you can't
tell that by looking at the boxes they come in.

Edmund Industrial Optics sells lenses in the $30 to
$50 range that you can use on a web cam that will help
with the F ratio problem.

A camera that have zoom capabilty in the optics
usually will vignette the image. So they are not as
usefull.  You need to get the front of the lens
element right up against the knife to be usefull.

The two models that I use (Phillips and Creative web
cam) are no longer made so I can't help with current
models.

I have also used CCD camera but there again the zoom
lens can get in the way.  

What every you use you will need a good way to mount
it behind the knife.  It is very hard to hold the
camera there by hand and get a usefull image.
