I presume that by 'easiest to build' you mean 'most chance of success'.
The Newtonian with a single large primary mirror is a good choice. You
have but one paraboloidal surface to grind. The glass is inexpensive
compared to the alternatives. Knowledge learned can be applied to other
more complicated optical projects. And it is a great performer after
building. The great debate amongst amateurs is what size to start
with. My suggestion is anything in the 15cm to 25cm range is fine.
