Technically, as the ronchi and foucault are slope tests, a proficient
worker can make the edge appear turned up by not working it.  I however, am
able to turn an edge down, merely by think about it.  In fact, just as when
I was a child, I always got the piece of watermelon with all the seeds, I
now always get the piece of glass with all the turned down edge.
