A central hill is no problem if the TDE is gone.  Just start going more to
the side to do your parabolization and it will quickly disappear and your
parabola will start appearing.  Don't keep your strokes to the side all at
the same distance or you will start getting zones that will be hard to get
rid of while parabolizing.
