ATM Quick questions

Before the Plaster of paris dries up, I have a few questions:

Since both sides of the tool need to be flat, and only one of 
them actually does get flat, how can I make the face of the tool
that is in my direction up, to be smooth?

My second question is about the tiles. I put the Plaster straight
on them, and I don't know how to clean them between the tiles.
