You can learn a lot about steppers from the Jones on Stepping Motors
page at

There is also a tremendous amount of information in the archives.  The
first quick check is how many wires there are.  If there are only 4
wires to the motor, it is almost certainly a Bi-Polar stepper.  If it
has 5 or 6 wires, its probably a Unipolar.  

Building a variable speed controller for either type is fairly simple. 
Then it just becomes a matter of adequate gear reduction.
