AC synchronous motors are only as constant as the AC source frequency
stability. If one is using the grid as the AC source then stability is
pretty good. If using something like a 555 timer based on RC components then
stability is only as good as the RC components. The best AC source wrt to
stability (other than the AC grid) would be a quartz crystal reference and
divided down.
