The plaster undergoes a hyration type chemical reaction and that interlinks
the powder of the plaster into a sturdy stone. Depending upon the amount of
water that you mix in, the plaster may take up most of it in the hydration
and thus the finished dry tool will weigh more than the original plaster but
less than the plaster and water total weight.
There's a chemical reaction listed somewhere that can tell you more about
how much the plaster weight is actually increased and I don't think that the
actual water pickup to complete the reaction is a variable.
