FWIW, thin sheet cork and other nice materials are available in a selection
of gasket materials for automotive applications.  Better auto parts stores
usually have it as well as the better hardware stores.
I would think using  a fairly high friction surface on one side with cast
iron or steel on the other face is a good highly controllable combination
for clutches.  Stuff like plastics tend to bring the forces up to get the
same amount of friction as the other stuff will.
