I see mostly a raised rim on the Foucault image, kind of like a plate is.
The extreme edge may be up, down or at the same level as the central shape
is but you won't find that out until you get rid of the ridge.  Otherwise,
the mirror looks good.  It's almost ready to start parabolizing.  Please
remember that when you do parabolize, the shape can change quite rapidly so
don't do a lot of strokes before testing the shape again.
BTW, I'd also suggest that you do a better job of focusing the camera (it
should be focused on the mirror) when taking pictures and you will also like
to do some contrast enhancement before really looking at it.  There's a free
program on the web called IRFANVIEW that will do the basic stuff in
improving the quality of the image.
