It's actually a 2-year supply that is encouraged. Many LDS people believe
that the Second Coming of Jesus Christ will happen in their lifetimes, but
this event will not signal the End of the World. The dead will walk among
the living, and infrastructure will break down, neccesitating the stored
supplies.
I married a Mormon. (Sounds like a movie title, eh?)
There are literally MOUNTAINS of used barrels in the Salt Lake area, as
stored food is rotated and used to insure freshness. I throw out half a
dozen 55-gallon drums every month; empty polyester resin drums. Government
regulations require me to clean them out scrupulously before disposal, to
avoid contaminating the landfill, or else hire a contractor who specializes
in hazardous waste disposal, at an outrageous fee.
I'll give anyone a free barrel, if you can pick it up yourself!
