Well, if you look at Texerau's book you'll see that he drew
a knife being heated by open flame (Bunsen burner). I used
ordinary candle. After a while you just "get the feel" how
long to heat the knife before starts boiling pitch too much.
Hot water is _definetely_ not hot enough.
Use thickish knife. Thin bladed ones cool down too quickly.
With nice massive blade you can do more than 5 cuts before it
cools too much.
