I used those McMaster-Carr swivels on an 18 point
mounting under the triangles.  I made the triangles of
birch ply and JBWelded them in shallow holes, using a
machine screw to bind them to the levelling bars.  I
used the flanged style, which has enough room to drill
and tap for a couple machine screws if you are
planning to attach to metal triangles.
A couple of my test swivels seemed a little stiff, so
I bought a few extra and picked the ones with the best
action.  It helped to thread them onto a headless
machine screw chucked into a drill to "run them in"
with a little light oil.  This seemed to polish out
the rough spots, and even the baulky ones eventually
worked fine.  You'll only need a couple degrees
wobble, and there is more than enough wiggle room
before the swivel binds at an angle of about 10-15
degrees.
