My problem at this point isn't out-of-roundness, it's roughness. I'm not sure 
Thomas' solution addresses out-of-roundness either, as it uses springs to 
press from either side. What it will do is allow me to use more grinding 
pressure without pushing the glass off center.

For solving out-of-roundness, I think a jig with a rotating diamond blade held 
rigidly and fed into the glass would be the way to go...
