Paper:
Use a variable contrast paper such as Ilford Multigrade IV RC Deluxe with a
set of Multigrade filters.  Or go the fiber based route if you like that
look.

Back in the old days, I used Ilford Multigrade paper and filters
exclusively.  Great stuff!  I was using a variable condenser enlarger.
Grade 5 was usually too contrasty.  I usually printed with a grade 3.5 or 4.
Geez....now you got me missing the smell of Dektol and fixer..... :-)
