This I will somewhat disagree on. There is Luminance data resolved at
that point only if the two adjacent areas are emitting widely different
wavelengths. A cutoff of one red value next to a dimmer red value
which would resolve in an astro-camera would not in the consumer
camera.
Unfortunately most astro pictures are composed of large sections of
monochrome emissions and the only difference is the luminance, which
would not resolve at the 1x1 pixel size.
For daylight shots in which there is often a wide range of colours then
you have a higher chanse of approaching the single pixel resolution.
