Yes, but if I take that 16-bit image and do a contrast stretch, when I
finally save it back out as an 8-bit image, I still have smooth tones.
It I take the 8-bit image and do teh contrast stretch, I can see the
difference in the final version.

Maybe I misunderstood both you and Jon, but I've been assuming the
issue is not a 16-bit final result vs an 8-bit final result but rather
starting at 16-bits and working on it versus starting at 8-bits and
working on that.
