It is the standard for web or displaying purposes.
Rougthly, sRGB is the profile for a standard monitor.
If you open an image with a web broser (typically a
jpeg one) it will be assumed that it has a sRGB
profile embedded. So, if you have disabled the color
management, or just want to use the image for
displaying purposes, don't use a profile embedded, or
use sRGB (you have to calibrate your monitor...)

Well, this is just a matter of practice... and my
recomendation is to use the better image processing
software you can. For example, while Photoshop is a
great software for common images, it is not well
suited for astrophotography, specially raw ones
(scanned or from a CCD). One important feature of
Photoshop that many are not aware of is that it only
works with 15bits instead of 16, so you might be
loosing a lot of valuable data. Do all your first
adjustements (most of them the most aggressive ones)
in a software that can handle a greater bit accuracy.
There are many of them, specially made for AP, and
some of them are freeware.

What Jerry said about doing as much as you can in the
prescan, while you get more experience, is a great
suggestion. Anyway, when you get familiar with levels
(histograms) and curves, go back to raw scans.
