All Hasselblads have mirror lock-up before exposure.
The manual wind cameras 500C, 500CM, etc. have a button under the wind crank which raises the mirror and it doesn't come back down until you wind and cock the camera. The older manual cameras do not have any batteries to worry about. I don't know about the newest ones. The motorized cameras 500EL, 500ELM etc. wouldn't be the best choice for astrophotography.

Infinity focus is another matter. With my Hasselblads the infinity mark does not always produce the smallest star images. You'd have to perform a test on each lens for piggy-back work.

Focus screens are interchangeable on 500CM's and up. The older 500C's are fixed.
Some people put Beatty Intenscreens in them to improve brightness.
For prime focus work, you'd have to find a knife-edge system that will work with the 'blad back focus distance.

In all honesty, right now, the Pentax 67 system would be a lot easier to use, easier to adapt and easier to focus, not to mentions a lot less expensive.
