I have two F3/T's devoted to astrophotography. The T setting is a great way
to handle shutter release (no hanging cable releases; totally mechanical
method - no reliance on the battery to keep the shutter open). Use a dark
cloth/hat trick over your optics to release and close the shutter and you're
all set. Yes, you move the shutter speed dial to release the shutter, but it
works fine.
The 180mm f/2.8 is a superb lens, you won't go wrong with it. Some other
lenses that I have had good results with for astro work are the 55mm and
105mm Micro lenses and the 300mm f/4.5 EDIF.
You may also want to consider a nitrogen or dry air purge for your camera. I
bought extra camera backs and drilled behind the pressure plates for my N2
system. I just put the original backs on to restore the camera to normal
functioning.
