         The ability to develop each shot one by one.  Each sheet is one 
shot.  With a roll of film (35mm or 120) how many shots do you use in one 
night's setting?  2, 3, 6?  Even if you pulled an all nighter, the odds are 
will not not use all 36 exposures on a roll of film on one night.
         The advantage then is say you develop your first shot, and it's a 
bit underexpsoed for your liking, then the next sheet you can increase your 
development time.  Also, if you had some shots - oh, numbers simply for 
sake of arguement here - exposed for 10 minutes, some for 30  minutes, you 
can vary your development times.  You can I suppsoe even cvary yor 
developer - say for exmaple if shooting tech pan, do one sheet in D-19, the 
enxt sheet in HC-110, if you think that will help.
         that all beign said, there are other advantages & drawbacks, and 
it is possible to cut up 120 and even 35mm film into individual pieces for 
single shots (such as in use on Schmidt cameras), but it is phyiscally & 
ergonomically much easier to handle a sheet of film in the darkroom than a 
single 35mm piece of film.  Not saying ti cannot be done, just saying one 
is easier than the other.
