Chris,

I think many of the commercial panorama programs would allow you to do
this (although I am not sure about their accuracy - astrophotos are more
demanding than landscape pictures). Here is a free software package that
supports fisheye lenses:

There is also a commercial front-end (though I have no personal
experience with it):

Another option would be to create an artificial star map using a
planetarium program (such as The Sky or XEphem) and use Registar to
transform your fisheye images to that projection.
