Being new to the group I thought I would add my two cents worth...
 
Dec or JMI motors...  Neither, replace the mount.  I used a C8 and C14 for 10 years and with the stock mounts.  I got to use a c8 on a good EQ mount and the difference is well worth the cost.
 
STV Guider: No clue...
 
Off-axis or guide scope:  Off Axis.  I have used both and can't tell you why, but I always got better images with Off-Axis guiding.  I tried a good Guidescope, but always was able to get better results with the Off-Axis...

I have a Celestar-8 that I want to rig up for guided prime-focus photography.  In respect of those that populate this board with far more knowledge than I have on the subject, I have been reading posts here for about a year before jumping in with a bunch of questions.  I think I have it organized in my mind, and I tender my ideas for critique:
 
1. DEC and FOCUS motor drives: do I go with Celestron or JMI?
2. Looks like the STV is the best guider out there
3. Guidescope or off-axis? Both camps seem to have equal merit to their arguments.
 
I'm going to be using an Olympus OM-1n camera that I found absolutely mint in a second hand shop for $50 CDN!
 
I look forward to the, doubtless, considerable recommendations and advice.
