Wow ... that's a nice problem to have!! ;-)

Personnaly I think I would go with a very familiar object that can greatly profit of such a large apperture and top quality CCD
equipment. The first two objects that came to my mind are M57 and a close-up on the Horse head neb. Both are very familiars but
reveals a lot of unsuspected details with these large equipments. The shots of these objects by Robert Gendler are good examples of
that.
